This one isn’t really a recipe, it’s more of a “too hot to cook, too good to order in” assembly job. Think girls’ movie night, a glass of wine outside as the sun goes down, and a board you can just keep picking at while you natter. Minimal effort, maximum payoff, and every element gets its own hit of PUNCH. The beautiful thing about ‘recipes’ like this is you can kind of thrown on and keep adding whatever you’ve got to hand. A few juicy figs, some crunchy, salty cornichons or grill up some halloumi. Whatever you’ve got to hand or whatever takes your fancy. But whatever you’ve got, add a drizzle of something and a pinch of PUNCH to elevate it and give it that hit of flavour and crunch we all crave.

Prep time: 10 minutes, no cooking required
What’s on the board
• Burrata, torn open, drizzle with olive oil or maybe a balsamic glaze and top with PUNCH Your Eggs
• Datterini tomatoes (these or baby plum are far better than cherry tomatoes. This is a hill I will die on) and rocket, drizzle with a little oil, top with PUNCH Your Salad
• Crumbled Parmesan and Manchego, drizzled with honey and topped with PUNCH Your Eggs
• Hummus, topped with PUNCH Your Eggs
• Fibre crackers
• Carrot and cucumber batons
The assembly
1. Place the burrata in the centre of your board and tear it open slightly. Sprinkle generously with PUNCH Your Eggs.
2. Chop the datterini tomatoes and toss with the rocket. Arrange alongside the burrata and finish with a sprinkle of PUNCH Your Salad.
3. Crumble the Parmesan and Manchego together in a small pile, drizzle with honey, and top with a scattering of PUNCH Your Eggs.
4. Spoon the hummus into a bowl or jar and finish with PUNCH Your Eggs on top.
5. Fill in the gaps with fibre crackers, carrot batons, and cucumber batons for scooping and dipping.
6. Pour the wine, dim the lights, press play, and dig in.
Notes
• Swap in whatever cheese, crackers, or crudités you’ve got on hand - PUNCH toppers are doing the heavy lifting on flavour and crunch, so the board is very forgiving.
• Best assembled just before serving so the burrata stays soft and the crackers stay crisp.
