If you’re after a breakfast that feels like dessert but still does its job: keep you full, a hit of fibre, and only takes about five minutes of actual effort — this one’s for you. Layers of coconut chia pudding, smashed banana, a dusting of cacao, fresh banana slices, and a generous scoop of chocolatey, crunchy goodness to top it off with PUNCH Your Porridge. 
Make it the night before and breakfast is sorted but we’d recommend leaving the banana slice toppings and PUNCH added last minute right before eating to retain that crunch and doge those brown bananas.

Ingredients
• 4 tbsp chia seeds
• 150ml coconut milk
• 3 tbsp Greek yoghurt
• A drop of vanilla essence
• A small dash of maple syrup
• 1 ripe banana, smashed
• Cacao powder, for dusting
• Half banana, sliced, for topping
• PUNCH Your Porridge for topping
Method
1. In a bowl/ jug, whisk together the chia seeds, coconut milk, Greek yoghurt, vanilla essence, and maple syrup. Set aside to thicken while you prep the rest.
2. Smash the banana and divide it between two glasses or jars, spreading it in an even layer at the bottom.
3. Dust a layer of cacao powder over the smashed banana.
4. Once thickened, spoon the chia pudding over the top, dividing it evenly between the two glasses.
5. Finish with a few banana slices and a generous layer of PUNCH Your Porridge Chocolatey Food Topper.
Notes 
• This keeps well in the fridge for up to 2 days, though we’d add the fresh banana and PUNCH topper just before serving so everything stays fresh and crunchy.
